The Best Vegan Banana Bread

This bread is delicious, nutritious and just so happens to be vegan. Perfect for those of us who are “veggie-inclined” or, if you happen to find yourself simply out of eggs. It takes 10 minutes to throw together and leaves the house smelling amazing! Enjoy!
Yields one 9x5” loaf
Ingredients
Nonstick vegetable oil spray
2 tablespoons ground flaxseed
6 tablespoons lukewarm water
1½ cups all-purpose flour
½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
½ cup plant-based milk, oat, or almond
¼ cup (½ stick) plant-based butter, earth-balance
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
½ cup cane sugar
½ cup coconut sugar
3 large, very ripe bananas, mashed (about 1 ½ cups)
½ cup chocolate chips (optional)
½ cup chopped walnuts (optional)
Directions
Preheat the oven to 350°F.
Lightly grease a 9x5” loaf pan with nonstick spray. In a small bowl, whisk together flaxseeds and water and let sit until thick and gelatinous, about 5 minutes. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon and salt. Set aside.
In a large bowl mix together milk, butter, vanilla extract, apple cider vinegar and mashed bananas. Slowly and with a spatula, fold the flour mixture into wet ingredients until just combined. Fold in chocolate and/or walnuts, if using. Pour batter into a prepared pan; decorate with cut bananas if desired.
Bake bread until a toothpick inserted comes out clean, 60-70 minutes. Transfer to a wire rack and let the bread cool in the pan for an hour. Turn out the bread and let cool or dive right in!
