Tall Timbers Grilled Oysters
This simplest preparation of butter, finely diced shallots or garlic, and Old Bay transforms fresh oysters into a delicious, healthy, and sustainable treat.
- Heat the grill to medium high. Place shucked oysters, with their briny liquor in the shell, on a heatproof tray or directly on the grill if they’ll sit upright.
- Close the lid and cook for 4 to 6 minutes, just until the edges of the oysters curl and the butter is bubbling. Serve hot. Transfer to a platter, garnish with lemon wedges, and enjoy immediately.
Tip: No shucking knife? Place oysters on the grill for 3 to 4 minutes until they start to open. A knife will finish the job.
